One of our weekly favorites! This dish is easy to make, quick, and the left overs taste just as good as the fresh! With that being said, this recipe makes approx 6 burritos.
Ingredients:
1 package chicken (usually about 2 lbs.)
2 packages Green Giant Broccoli Cheese and Rice Steamer
1 package of flour tortilla shells (this can be substituted with Corn or gluten free tortilla shells for a GF alternative)
1 Package shredded cheese
Sour cream
Directions:
1. In large skillet cook with entire package of chicken until cooked through, or to 165 degrees.
2. Take chicken off skillet and put into a large mixing bowl. (I like to put on a plate first, and cut into quarters putting a quarter at a time into the bowl)
3. You will then begin to shred the chicken. This can be tedious to 2 lbs of cooked chicken, but i promise it is worth it.
4. While shredding the chicken, you can cook the steamers according to the directions on the package.
5. In the large bowl, combine the cheesy rice and broccoli and shredded chicken.
6. Put ¼ of the cheese down the center of each tortilla, followed by ¼ of the chicken mixture, then tuck the ends in and roll up the burritos.
7. Heat a grill pan or griddle over medium heat. Spray the surface with nonstick cooking spray and put the burritos, seam side down, on the grill. Cook until golden brown and crisp, then turn and cook the opposite side, about 2-3 minutes per side.
8. Serve with hot sauce and/or sour cream.
